Unless you are keeping a herd of large animals like cows, it’s going to be very hard to keep grow food long term using just what’s “on” the farm or homestead. For a handful of raised beds, half dozen rabbits and similar number of chickens MAY provide enough fertilizer to keep your soil in good shape. But for a serious amount of ground, ie, enough to truly keep a family of 4 of so in food, it’s going to be next to impossible to produce ALL your fertilizer and soil amendments ON THE FARM or homestead. While I do NOT claim to be an “organic gardener”, most of these soil improvement techniques are similar to those used in organic gardening. As a rule, we do NOT use pesticides on our VEGETABLES. We have been forced to use them on our fruit trees before to SAVE TREES. Crust: 2 cups crispy almonds (Raw organic almonds soaked over night and dehydrated at 105 degrees with a little high quality sea salt for 2 days), 1 Cup grated coconut, 1 Cup organic dates and 3 Tablespoons organic virgin coconut oil. Process until desired consistency, then press into coconut oiled dish. Filling: frozen bananas processed until smooth and creamy. Topped with 1/2 Cup grated coconut and freeze until ready to serve. Note: You don’t need to use dehydrated almonds, you could just soak some raw almonds over night. It will just make a softer crust.
One of the greatest joys for me during the summer is enjoying all of the delicious fruits that become available, like the peach. There’s nothing like them. Particularly if you can pick them up fresh at the farmer’s market or even go to an orchard and pick them yourself. You know, fresh peaches and homemade deserts just seem to go together and what could be more old fashioned and delicious than a peach cobbler. My recipe for peach cobbler is simple and doesn’t take much time to make, that’s once you get the peaches peeled. I start with about ten medium size peaches, peeled and sliced, and to this I add a fourth of a cup of white sugar and a fourth of a cup of brown sugar. And for a little seasoning a half a teaspoon of salt and a half a teaspoon of apple pie spice which contains cinnamon, nutmeg and allspice. And as a final ingredient I like to add a couple of tablespoons of apricot brandy. This really brings out the flavor. Now once I get this in, I just mix it all together. Then I just pour it into the pie crust. With this cobbler recipe you can make your own pie crust or you can certainly use pre-made, but I always like to weave the top layer like this. Then I brush on egg white and sprinkle it with sugar just to give it that homemade touch. Now I cook this at three-fifty for about an hour and the aroma is fantastic.
